Scallops

One of my favourites whether they be on their own or part of a dish, they are always the highlight of my meals.

THis recipe is taken from Ina Garten and it's super easy to make. It's extremely flavourful and pairs well with a nice steak.

| What you need |

1 pound of scallops

Salt and fresh ground pepper

All-purpose Flour, for dredging

4 tablespoons (1/2 stick) unsalted butter, divided

1/2 cup chopped shallots

1 garlic clove, minced

1/4 cup chopped fresh parsley leaves

1/3 cup dry white wine

1 lemon, cut in 1/2

 

| What to do |

Sprinkle you scallops with salt and pepper to season, toss them in flour, and shake off the excess.

IN a large saute pan over high heat, melt 2 tbsp of butter. Once sizzling, add the scallops in 1 layer. lower heat to medium and allow the scallops to brown on one side before flipping them over to repeat. Once brown on both sides, add the rest of the butter into the pan with the scallops, then add the shallots, garlic, and parsley leaves. cook for 2 minutes then add in the white wine and cook for another minute. 

Serve them hot with a squeeze of lemon juice.
